This month’s nutritious and delicious recipe is brought to you by Doctor Divya Sharma, who qualified as a doctor in 2010 and now work as a general practitioner in north London. She has a keen interest in promoting a holistic approach to a healthy lifestyle.

“I started my Instagram account (@doctorbowl) to help people learn about the importance of leading a healthy lifestyle. I want to try and make it easy for people by showcasing quick and uncomplicated recipes. At the same time I believe that everyone should have a happy relationship with food and shouldn’t demonise so called ‘bad’ foods. All foods can be enjoyed in moderation as part of a varied and predominantly healthy diet and I hope my recipes reflect this.”

These tasty oven–baked falafel are so crispy that they taste just like the fried stuff without all the added calories. They also freeze well, so they’re a fantastic protein-rich option to keep on hand for future salads and pita sandwiches.
