Baobab Waffles with Greek Yoghurt & Fruit

I love sweet breakfasts and my specialty are pancakes and waffles and that is why I chose this recipe for you. There are three ingredients that will help to maintain your gut flora health which I believe is really important for overall health.

First of all, baobab powder that belongs to the group of superfoods has many health benefits but one of them is high dietary fibre content that aids digestion. Secondly, psyllium husk that helps to maintain regular bowel movements which helps to move waste out of the body. And the third ingredient that will make your gut healthy is the greek yoghurt that contains probiotics which support a healthy bacterial balance in the gut.

So now, let’s see the recipe for these lovely waffles served with greek yoghurt and fruit.

INGREDIENTS & METHOD

For one portion of waffles:

  • 40g rice flour (or any other you usually use)
  • 10g coconut flour
  • 10g baobab powder
  • 1 teaspoon psyllium husk
  • 1 teaspoon grounded cinnamon
  • 1 egg
  • stevia to sweeten
  • pinch of baking powder
  • milk or water to dilute the batter

Mix all the ingredients together and dilute with milk or water until you get slightly thicker consistency that’s not too runny. Fry in your waffle maker or bake in an oven inside a mould.

TO SERVE 

Serve your waffles with greek yoghurt and fruit.
